First Course – Champagne

A buckwheat lemon infused blini topped with a light smoked salmon mousse topped with Asian marinated cucumber sticks, sour cream and potato chip crunch. All elements of citrus, salty, tangy, and smoked fish pair exceptionally with a classic champagne.

Second Course- Pinot Grigio

Mexi Street Corn Salad
Buttery roasted corn in a creamy spiced sauce topped with cilantro, tomato and queso fresco. This provides a hint of heat to transition the palate and compliment the wine’s fruity and delicate aromas of pineapple, green apples, and lemon peel.

Third Course Sauvignon Blanc

A sweet, savory experience of caramelized onions layered with the tangy goat cheese and sweet fig jam. A favorite flavor combo with sweet to buttery whites such as Sauvignon Blanc. While delicious, the flavor profile is mild and easy to transition between white to red wines.

As we head into red wine with greater depth, we move into meatier foods with heavier sauces. Hearty little chicken meatballs baked in a tangy bbq sauce with hints of cinnamon and clove. This dish is designed to bring out the undertones of this bold red wine.

Fifth Course – Syrah

A mini sandwich layering herb roasted pork tenderloin, bacon onion jam, mustard and peppery arugula. This has a hearty, savory bite that marries with this Syrah, brimming with flavors of blackberry, dark red fruits and black olive.

Sixth Course – Red Blend

Chocolate Torte with Coffee Whip
Deep, truffle richness to match the depth of this black-violet wine. Straightforward chocolate flavors to let the subtle notes of the wine (plum, spice, even mint) to play front center. Topped with coffee whip cream and toasted walnuts.
