Cook onions in oil olive in large pan. Let them sit and not stir too much until you start to see it carmelize. Then gently stir to allow to evenly brown. About 35 minutes. Salt and let cool.
Bring goat cheese out ahead of time to warm up a bit. Mix goat cheese with pepper till spreadable.
Prepare thyme, make sure clean and dry. Separate leaves from stems, can crush a bit to release scent and flavor.
Line a oven sheet pan with parchment paper. Assemble the tart when all other elements are prepared. The puff pastry should still be cold before it goes in the oven.
Put puff pastry on center of pan. Spread goat cheese over puff pastry. Then layer on caramelized onions, then sprinkle thyme all over.
Bake 25-30 min. until puff pastry looks golden on edges.
As the tart is cooling, heat up fig jam until liquidly. Drizzle over all. Once cooled, cut into small squares depending on portion. 20 to 30 pieces.
